The King has arrived!
Copper River King Salmon that is.

The World’s best tasting wild Salmon caught in the pure waters of the Copper River in Alaska is now in season at Doris & Ed’s. We are one of the few restaurants in the area to feature this rare fish.

These Kings are named for the rivers to which they return. The Copper River King has bright orange flesh with a pronounced rich, silky flavor. The King is good for you too! It is high in Omega 3 values (the good fat!) Each May, hundreds of family-owned fishing boats leave the harbor in Cordova, Alaska and set out for the wild ocean waters of the Gulf. It is there, near the mouth of the mighty Copper River, that the fishermen set their nets and carefully fish for the famous Copper River salmon.

MANAGED FOR REGENERATION

The Copper River is famous the world over for the health of its salmon runs and the taste of its fish. This is thanks to carefully regulated fisheries that are managed by the Alaska Department of Fish & Game to guarantee salmon numbers large enough to reproduce and replenish the population.

GILLNET FISHING ON THE COPPER RIVER FLATS – A SELECTIVE AND SAFE METHOD

Copper River salmon are fished by local professionals using a method called gillnet fishing. As practiced in coastal waters in the United States, gillnetting is a selective, environmentally friendly method of providing highest quality fish to consumers.

We suggest pairing this wild salmon with either of these fine wines from California: Merry Edwards 2006 Russian River Pinot Noir or Roessler 2005 Clos Pepe Vineyard Pinot Noir.

The Delicious Morsels of Nantucket Bay

Bay scallops are small and delicate, with a mild, sweet flavor. Native to the western North Atlantic, they are carefully harvested from the shores and bays of Nantucket Island by small boats during the coldest months of the year. All this hard work just for your enjoyment! Why wait?

Florida Stone Crab Claws are back at Doris & Ed’s.

Did you know…

1. Stone crabs are harvested for their claws, which are a renewable resource!

2. Only one claw is removed during harvest and then the crab is returned to the water where it will regenerate a new claw in about 18 months.

3. The season officially opened on October 15th and runs through May 15th.
